Confetti Cheese Ball
This is by far our family's favorite cheese ball given to me by a neighbor we once had in Texas. It is great on crackers but we also like it as small appetizer sandwiches on pumpernickel or a hearty seed and nut style sandwich bread. My favorite is made by Oroweat but I can't for the life of me think of the name right now!

3 8 ounce packages cream cheese
2 1/2 ounce jar dried beef, chopped fine
1 bunch green onions, chopped fine (including the green parts)
4 1/4 ounces can chopped ripe olives (I like to buy the sliced ones and chop my own instead of using the ones than come finely chopped)
1 jar mushrooms, chopped fine

The ratio of ingredients isn't written in stone so feel free to experiment based on your own tastes. Soften the cream cheese and add the rest of the ingredients mixing well. I have used my KitchenAide, but be careful you don't overmix if you use this method.
