I got this recipe from a neighbor over 20 years ago. It was a family recipe given to her by her Czech mother-in-law. There is a bit of preparation involved, but once it's done you have enough food to feed a small army! One of our family favorites. On occasion I like to add slices of kielbasa between the layers.
Holubky (Stuffed Cabbage)
2 1/2 pounds ground beef
1 small onion, chopped
2 teaspoons salt
1/2 teaspoon pepper
3 large heads cabbage
3/4 cup V-8
1 large can stewed tomatoes
2 eggs
3 tablespoons catsup
dash of Worcestershire sauce
garlic to taste
3/4 cup rice
1 large jar sauerkraut
1/2 cup onion, chopped
Remove cores from cabbage heads. Scald or parboil the cabbage in boiling water. Remove and allow to cool before carefully removing a few leaves at a time. Trim down the thick ridge on the backs of the leaves to make them easier to roll.
Partially cook the rice in salted water (about 10 minutes) then strain and rinse with cold water to stop cooking. At this point the rice should be about half cooked.
Mix the meat, onion, salt, pepper, garlic, eggs, catsup, worcestershire sauce and rice. Spread each leaf with about 1/2 cup of the mixture and roll folding ends in as you do.
In a large heavy soup kettle place 1/3 the sauerkraut, 1/3 of the stewed tomatoes and place a layer of cabbage rolls on top. Add another layer of kraut, tomatoes and rolls until all of the rolls are used. Mix the 1/2 cup onion, V-8 and any remaining cabbage and kraut (chopped)and pour over the top. Cover the pot and cook on low for 2 hours or until done.
I have never cooked this in a crockpot but I would think this recipe would make an excellent candidate for that.
