The BEST Caramel Corn
We once moved an entire household fueled only by a batch of this scrumptious corn!

6 quarts popcorn (I pop mine in an air popper)
1 cup butter (the real stuff, don't cheat!)
2 cups brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla

Place the popped corn in a large bowl. Melt butter and stir in sugar, syrup, and salt. Bring to a boil stirring constantly then boil 5 minutes without stirring. Remove from the heat and add the baking soda and vanilla, stirring to blend. Immediately pour over the popcorn and mix well to coat. Put in two large shallow baking pans. Bake in a 250 degree oven for 1 hour stirring every 15 minutes (remove from oven to prevent burns) and rotate the pans on the upper and lower shelves for even cooking. After one hour remove the oven, cool thoroughly and break apart. Store in an airtight container.
