An entire high school tennis team once devoured these bars in a matter of minutes. I find with the regular Rice Krispie bar recipe I almost never have marshmallows in the pantry. I have either forgotten them at the store or they were ravaged by the family marshmallow lover. If there was a contest for a cookie bar recipe that could be described as fast and easy to make, full of healthy ingredients, and seriously addicting, I would say these bars would definitely be in the running!
Note: If you love peanut butter and you are trying to cut back, do not make this recipe!!.
1/2 cup light corn syrup
1/4 cup brown sugar
dash of salt
1 cup peanut butter
1 teaspoon vanilla
2 cups Rice Krispies
1 cup Wheatie, Corn Flakes, or similar grain cereal, slightly crushed before measuring
Butter a 9x9 square baking pan. Combine the corn syrup, brown sugar, and salt in a large saucepan and bring to a rolling boil (be careful not to get splattered!). Stir in the peanut butter then the vanilla. Add the cereals. Mix well and press into the buttered pan. Chill and cut into squares. Store in the refrigerator but best eaten at room temperature in my opinion! That is, if you can wait that long.
Makes 16 bars approx. 180 calories each
Variation: Add chopped peanuts, raisins, or other dried fruit. Yummm!
