H-O Quickie Cookies
My mom got this recipe at a grocery store close to 50 years ago. It was a demo for a type of quick oatmeal that was being sold, H-O. When the oats were no longer available in stores my mom told me that my (then) favorite cookie could never be made again. Sigh. It was years later, after I was married with kids of my own that I thought "hey, wait a minute. Why the heck couldn't this be made with other quick oats? I mean, we're not talking super science here, they are just OATS!". I'm glad to report that batches made with the "other" oats are basically indestinguishable from the originals.

Super rich, super easy, super good! A batch of these lasted about 10 minutes at a high school tennis match.

3 1/4 cup quick oats
3/4 cup butter
3/4 cup sugar
1 teaspoon vanilla

Combine all ingredients in mixer until well blended. Press dough into 1 inch balls (dough is pretty sticky!). Place on ungreased cookie sheet and flatten with a fork dipped in water. Bake at 350 degrees for 15 to 20 minutes or until lightly browned. Allow to set up about a minute before attempting to remove from cookie sheet. Store in airtight container when cool.
