Ricotta Banana "Ice Cream"

2 very ripe bananas, chunked and frozen
1/2 cup ricotta cheese
1/2 teaspoon vanilla extract (better if you use the real stuff)
1 tablespoon sugar (I haven't tried it but I imagine you could use a sugar substitute here
1/2 cup milk

Combine all ingredients in a food processor until smooth and ready to serve. Best if eaten right away.

The milk is something that I added the last time I made it. Try it first w/o and add if you want a softer consistency. Also, I have a note here that I made the recipe using 7 ounces of frozen banana,10 ounces frozen unsweetened strawberries, 1 teaspoon vanilla, 2 tablespoons sugar and 1 cup ricotta. Of course I forgot to note if I liked this version and I really don't recall, so try at your own risk!
